Tuesday cooking class – butter paneer masala

Every Tuesday, the kitchen staff gives a cooking class to the volunteers. Today we learned how to make butter paneer masala, which we ate for dinner. It was yummy! šŸ™‚

It seems so easy to make, and I will definitely try it when I’m at home!

Here is the recipe (adapted from a recipe made for 15 people… I’m going to assume this makes about four servings lol):

Butter Paneer Masala

5 tbs Oil
1 large red onion, diced
½ head Garlic, chopped
5 cm piece Ginger, chopped
3 Tomatoes, pureed
2 tsp Coriander powder
1 ½ tsp Tumeric powder
1 ½ tsp Chilli powder
1 tsp Garam masala powder
1 tsp Salt
1 stick of butter
1 cup water
50 grams Cashew nut paste or cream
250 grams Cottage cheese, diced
Fresh coriander for garnish, chopped

Directions:

Heat oil

Add onions and sautee for five minutes
Add garlic and ginger, sautee for another five minutes

Add tomatoes, stir well
When you see the oil separating at sides, add coriander, turmeric, chili, garam masala powders and salt, stir well
Add butter and stir in water to preferred consistency

Let mixture simmer for 15 minutes
Add cashew nut paste or cream, stir continuously for five minutes

Add cottage cheese (you can deep fry them or just add it to the curry)

Add fresh coriander for garnish

Serve with naan or rice. Enjoy!
